A Recipe for Wednesday: Chicken Taco Bowls

I have started experimenting with crock pot meals and I don't know why I just started.  Seriously, crock pot meals are so easy! And there isn't a big mess to clean up either.
This is a really good recipe, I took left overs the next day to work and everyone was asking me for the recipe.


INGREDIENTS:
1½ lbs. chicken breasts
1 (16 oz.) jar salsa
1 (15 oz.) can black beans, drained
1 Tbsp chili powder
½ Tbsp cumin
½ Tbsp minced garlic
½ tsp dried oregano
¼ tsp cayenne pepper
¼ tsp salt
to taste cracked pepper
2 cups dry rice
8 oz. shredded cheddar
½ bunch cilantro (optional - I didn't use it this time)

DIRECTIONS:
1. Add everything except the rice, cheese, and cilantro to the slow cooker along with ¼ cup of water (for good measure). Give everything a good stir and make sure the chicken is covered in the mixture.
Secure the lid on your slow cooker and cook on low for 8 hrs.
2. Near the end of the cooking time, cook the two cups of rice according to the package directions.
After 8 hours of cooking, carefully remove the lid of the slow cooker. Stir with a fork to shred the chicken (it should be super tender and will shred easily). Build the taco bowls by placing rice on the bottom, then the taco chicken mix, shredded cheese and fresh cilantro.

A little update on life:
So school started on Monday.  And it is already so stressful! There is so much to do, and I'm trying to work 20-25 hours a week on top of it.  I have no idea how I am going to make it through.  And I don't see Braden until 10 o'clock at night!  Next semester is just going to get worse.  I have no idea how I am going to make it through! So if any of you ELED majors have any tips please give them to me!  And if anyone wants to donate to mine and Braden's college fund that would be great! ;) just kidding.  I only have three semesters left.  I can make it through...right?
