A Recipe for Wednesday: Molletes

INGREDITETS:
One bolillo roll, or a section of French bread
A few tablespoons of refried beans
Monterrey Jack Cheese
Pico de Gallo (optional)

DIRECTIONS:


 Cut the bread open length wise
Spread a few table spoons of refried beans onto each piece of bread 
Add cheese over the top of beans

 Place in oven at 350F for about 5 minutes (or until cheese is melted/golden brown)
If you would like you can eat it like this
 We think it's best if you put some pico de gallo on it

This is a quick and extremely easy and is also one of my husband's favorites.  Can you believe that in Mexico this is a breakfast food? Weird huh.

B.T.W. Finals are over! My best friends wedding is next Friday, and our anniversary is next Saturday! I can't wait!
